Guacamole, salsa, greens & ground seitan on home made corn tortillas YUM!

Originally puchero was a meat and chickpea stew from the Andalusia region of Spain. It started as a wintertime peasant dish eaten over several days, first with rice, then with noodles and so on. Puchero is also popular in Paraguay, Uruguay and Argentina. Filipinos have their own version, which is sometimes spelled pochero.
This is a re-make of Dani’s Vegan Raw Stuffed Zucchini Flowers. This time is much more complicated (and delicious). The stuffing is pumpkin seeds pate, the salad is sunflower sprouts and wild flowers :o and it comes with marinated wild mushrooms :O

New raw wrap. The ”dough” is made of dehydrated zucchini & chia seeds :o
OK… So this is one of the most amazing raw dishes that I’ve ever eaten. It’s spinach cream, carrot, cucumber, avocado, radish sprouts & tomatoes wrapped in a zucchini and eggplant dehydrated wrap. It comes with a salad on the side and the whole thing just tastes good.
Eggplant a la Italiana: I have to say, I’m not a tofu fan but I love love love this little rolls. They’re filled with tofu & veggies and come with a basil tomato sauce nomnomnom ;D
